Here’s a quick and easy breakfast menu that is packed with protein and flavor. Two eggs on microwave, half a cup of cottage cheese, one protein bagel, half avocado and sliced tomatoes. You won’t fell hungry until lunchtime!

  • Eggs. For one serving, use two large fresh eggs. I recommend grade-A eggs from free-range chickens.
  • Salt and pepper. Beating eggs with a pinch of kosher salt and cracked black pepper adds a delicious savory flavor. Feel free to add other seasonings, if desired.

My recipe is healthy and simple – it requires no oil, no butter, no milk and no heavy cream. But if you want to cook the fluffiest eggs in a microwave, I suggest whisking in little olive oil and a couple tablespoons of your favorite milk. As a rule of thumb, use 1 tablespoon of milk for each egg.

How to make scrambled eggs in microwave

Step 1 – Prep. Grease a small microwave-safe bowl with olive oil or melted butter to prevent sticking. Add eggs to the bowl and beat with salt and pepper. For fluffier eggs, you can optionally add milk and olive oil or butter.

Step 2 – Cook. Microwave on high, uncovered, for 45 seconds. Remove eggs from the microwave, give a stir and microwave again for 30 – 45 seconds. They are ready when light and fluffy.

  • Make them cheesy – Before cooking, whisk the eggs with a couple tablespoons of shredded cheese. Tasty options include cheddar, shredded mozzarella, Gruyère, briny feta and Parmesan cheese.
  • Add meat – Pack more protein and flavor with the addition of diced bacon, turkey ham, cubed ham or breakfast sausage. The meat can be added on top as a savory topping.
  • Use egg whites – For a low fat and low calorie dish, replace one egg with 2 egg whites. If using egg whites in brick, this equals 1/4 cup or 60 ml.
  • Try seasonings – Beat eggs with salt, black pepper, garlic powder, onion powder, chili flakes or Italian seasoning. Also a dash of hot sauce will taste delicious.

  • Stir while cooking. Remove the bowl from your microwave after 45 seconds, then stir well and cook for additional 30 to 45 seconds. If you don’t whisk them, the eggs will resemble an omelet rather a fluffy scramble.
  • Adjust cooking time. Microwave ovens may have a different power and wattage, some cook faster. Mine were ready in just 1 minute, but you may need 15 to 30 extra seconds according to your oven. Just make sure you don’t overcook them, they easily get rubbery.
