Microwave Scrambled Eggs

No time to cook? Try this easy Microwave Scrambled Eggs recipe. Fluffy and delicious as in a skillet, but made in 2 minutes in a bowl. It's perfect for quick high protein breakfasts or dinners.

Ingredients

  • 2 large eggs
  • salt and pepper to taste

Optional Ingredients

  • 1 ½ tsp olive oil or butter
  • 1 ½ tbsp milk dairy or nondairy
  • seasonings of choice

Instructions

  • Grease a small microwave-safe bowl with olive oil or melted butter to prevent sticking.
  • In the microwave safe bowl, beat eggs with salt and pepper. For fluffier eggs, you can optionally add olive oil and milk.
  • Microwave on high, uncovered, for 45 seconds. Remove eggs from the microwave, give a stir and microwave again for 30 - 45 seconds. They are ready when light and fluffy.
  • Serve with your favorite seasonings and garnishments, such as shredded cheese or avocado.

Notes

Serving Size

This recipe makes one serving. Feel free to double or triple the ingredient quantities, if you are cooking for more people. In this case, I recommend microwaving 2 eggs at the time.
