If this sounds too good to be true, let me tell you this. My low carb sushi rolls are made with cucumber in under 10 minutes. What is more, they are so delicious with my Greek yogurt tuna salad.

These low carb sushi rolls with cucumber are a real protein bomb. They come with just 4 grams of carbs but have 29 grams of protein!
This low carb sushi recipe gets its protein from two sources:
- Tuna fish
- Greek yogurt
What is more, you will love that these protein sushi rolls are also low fat. That’s why my recipe uses canned tuna fish in water and 2% Greek yogurt instead of mayo.
Ingredients for cucumber sushi rolls
You only need 4 simple ingredients to make these low carb sushi rolls with cucumber. And you will love that all ingredients are simple foods which you probably already have at home.
Here is all you need to make these cucumber sushi rolls with tuna:
- Cucumber
- Canned tuna (in water)
- Greek yogurt (2% or 0% fat)
- Lemon juice
On the top of that, you can flavor your healthy tuna salad with 1/2 teaspoon Dijon mustard. This also is optional, but I like serving my cucumber sushi rolls drizzled with sriracha mayo or dipped in low-sodium soy sauce. Just like normal sushi rolls, but low carb and low calorie!
How to make low calorie sushi rolls with cucumber
This low calorie sushi recipe is so simple that anyone can make it. These rolls come together in under 10 minutes and do not require any cooking.
My low carb sushi recipe follows two simple steps:
- Making healthy tuna salad with Greek yogurt
- Putting cucumber sushi rolls together
Making low fat tuna salad with Greek yogurt
Drain and rinse canned tuna. In a bowl mix tuna together with Greek yogurt, lemon juice and optionally mustard.
Putting keto sushi together
First, cut cucumber in half and remove the inside with either a small spoon or knife to create a long, hollow tube.
Fill the inside of the cucumber with the healthy tuna salad you have prepared before, then slice cucumber into rolls.
Serve directly or keep in the fridge until eating. I served mine with sriracha Mayo.
How to serve low calorie sushi
These low calorie sushi rolls with cucumber are the versatile recipe that is great for a fresh snack, lunch or dinner. What is more, you can make these low carb sushi rolls as appetizers for parties or family dinners.

How to store low carb sushi rolls
After preparing these sushi rolls with cucumber, serve right away or store in the fridge until eating. If stored in the fridge in an airtight food container, these keto rolls will stay fresh for up to 3 days. After 3 days, the Greek yogurt mayo will start to taste sour.
