What happens when your girlfriend loves chocolate? Simple, you bake brownies. A lot of brownies! After having my flourless Greek yogurt brownies for something like two weeks in a row (they are her favorite), it was time to try a new recipe. So I came up with this flourless protein brownie recipe - the fudgiest protein brownie recipe EVER!
Low carb brownie ingredients
There is no need for flour to make these extra fudgy protein brownies, which makes them gluten-free and low carb. What is more, this flourless protein brownie recipe only uses simple ingredients that are wholesome and nutritious.
So, without further ado, here is all you need to make low carb protein brownies without flour. And no, since it is made from blended nuts, almond flour does not officially count as flour 😉
- Almond flour: for protein brownies that are also low in calories and fats, this recipe uses defatted almond flour. You can replace with full-fat almond flour, or even oat flour in case you can’t find almond flour.
- Protein powder: this low carb protein brownie recipe uses whey protein powder, but you can replace it with plant based protein options or casein (with some adaptations, more on this later). In terms of flavor, I like vanilla but also chocolate or brownie powders will taste great.
- Cocoa powder: for healthier protein brownies, make this recipe with natural cocoa powder.
- Granular sweetener: this recipe uses erythritol as a calorie-free and sugar-free option. You can replace with your favorite granular sweetener, coconut sugar or brown sugar. As long as it is not a syrup, it should be fine.
- Eggs: they will add taste and bind the dough. For flourless protein brownies that are also vegan, you can substitute the eggs with two flaxseed eggs.
- Dark chocolate: use your favorite chocolate, sugar-free or extra dark for a healthier recipe. As it is going to melt, you can also opt for chocolate chips.
- Coconut oil: this ingredients ensures that the chocolate melts faster and better, plus it will make you protein brownies super fudgy. As an alternative you can utilize butter or even a neutral oil.
- Vanilla extract and salt: these two ingredients will give your low carb brownies an irresistibly delicious flavor!
Which protein powder for protein brownies?
This flourless protein brownie recipe uses whey protein powder. I find that whey is the best option for this dessert because it mixes very well without getting thick or forming lumps. If you want to make these fudgy protein brownies with casein or vegan protein powder, instead, your recipe may require an additional drop of milk. All you have to do is adding more liquid to the brownie batter until it gets fix. And if you mess up with too much milk, adjust with more almond flour or protein powder.
In terms of flavor, I like preparing my low carb protein brownies with vanilla or chocolate protein powder. But you are free to utilize any flavor you like: vanilla, chocolate, brownie, salted caramel, peanut butter or even unflavored. Just keep in mind that, if you opt for unflavored protein powder, this recipe may require some more sweetener to fix the taste.
How to make protein brownies with no flour
Start by combining in a large bowl all the dry ingredients - almond flour, protein powder, cocoa powder, granular sweetener (or coconut sugar), vanilla extract and salt.
Cut the dark chocolate into chunks and, using a separate bowl, melt it with the coconut oil (or butter) in the microwave for about 1 minute to 1 minute 30 seconds. As an alternative you can also melt in a bain-marie using a pot.
Once the chocolate has melted, add it to the dry ingredients together with the two eggs. Using a fork or spatula, stir to combine all the ingredients into a brownie batter. Depending on the protein powder that you are using, your brownie batter might require either more almond flour (in the case of whey) or a drop of milk (in the case of vegan protein powder or casein).
Transfer the protein brownies batter into a 15 cm x 15 cm (7 inch x 7 inch) prepared baking pan. If you desire, top with chocolate chips and coarse salt before baking in hot oven for about 20 minutes.
How to store flourless protein brownies
After baking, let these flourless protein brownies cool at room temperature before storing. Once cooled, seal the brownies in an airtight food container and store at room temperature for a maximum of 3 days. For a longer storage, seal the brownies and refrigerate for up to 5 days.
As an alternative you can also seal and freeze these fudgy protein brownies for up to 3 months. And before serving, all you have to do is reheating your dessert in hot oven for a couple of minutes.

Ingredients
- 70 grams (¾ cup) almond flour or oat flour
- 50 grams (½ cup) protein powder
- 30 grams (⅓ cup) cocoa powder
- 90 grams (½ cup) granular sweetener or coconut sugar
- 1 tsp vanilla extract
- ⅙ tsp salt
- 80 grams (3 oz.) dark chocolate
- 15 grams (1 tbsp) coconut oil or butter
- 2 eggs
Instructions
- Preheat oven to 180°C (350°F) and fold a 15 cm x 15 cm (7 inch x 7 inch) brownie pan with parchment paper.
- In a large mixing bowl combine all dry ingredients - almond flour, protein powder, cocoa powder, granular sweetener (or coconut sugar), vanilla extract and salt.
- Cut dark chocolate into chunks and melt it in a separate bowl with coconut oil (or butter) in the microwave for about 1 minute to 1 minute 30 seconds (or melt in a bain-marie using a pot).
- Add melted chocolate mixture to dry ingredients together with two eggs. Using a fork or spatula, stir to combine into a brownie batter (see notes*).
- Transfer the protein brownies batter into the prepared baking pan. Top with chocolate chips and coarse salt if you desire.
- Bake in hot oven for around 18 to 20 minutes.
