This recipe is actually a sequel of my 3-ingredient banana brownies. Ever since they went viral on social media, more and more people have come back to me with their own recommendations. Someone added protein powder, others had fun with chocolate and others went nuts with pecans. But it was actually a story tag that inspired my creativity. One of you turned my brownies into muffins, pointing out how delicious they were. Curious to try, I mashed some bananas, mixed them with cocoa and nut butter, and baked the batter in cupcake molds. Wow, my eggless banana muffins came out so delicious that I had to share this recipe with you!

I promise, this was not just another clickbait. When I say that these are 3-ingredient muffins, I mean it. You only need bananas, cocoa powder and your favorite nut butter to whip up a bunch of super moist muffins. Flourless and healthy!

There’s not much to say about the ingredients, actually. But still, I want to give you a couple of tips and suggestions that will allow you to make the best flourless banana muffins.

  • Ripe bananas. Bananas are the main ingredient in this recipe, which means you should pay attention to your choice. Be sure to use bananas that are very ripe, they should be soft to touch and have dark spots all over their skin. These are the ones with a sweeter flavor.
  • Cocoa powder. This is the secret for flourless chocolate muffins without chocolate! Cocoa powder is going to give your cupcakes a rich chocolaty flavor, helping bind the batter without flour. For healthy banana muffins, I recommend choosing pure cocoa powder with no sugar.
  • Nut butter. These flourless vegan muffins can be prepared with any nut butter you like. Whenever making them, I like swapping between peanut butter and almond butter because I really like the flavor they give. Other great options are cashew butter, hazelnut butter, walnut butter, or sunflower seed butter and tahini in case you are allergic to nuts.

Optional ingredients and mix-ins

These flourless chocolate muffins are already perfect as they are, with just 3 ingredients. But if you want to take this recipe to the next level, then I recommend experimenting with additional mix-ins. From chocolate chips to walnuts, the possibilities are endless. Feel free to stir in your favorite ingredients, mix and match, or try some of my suggestions.

  • Vanilla extract: When preparing the batter, mix in half teaspoon vanilla extract for more flavor.
  • Baking powder: Be sure to add about 1 teaspoon baking powder to help these flourless banana muffins rise and get fluffier.
  • Protein powder: If you are looking for a more balanced treat, replace 25 grams (1/4 cup) of the cocoa powder with a protein powder of your choice. My tip is to try with chocolate flavored protein powder, so good!
  • Chocolate chips: Prefer dark or sugar-free chocolate to keep these muffins healthier. For this recipe I used 90% dark chocolate chips.
  • Pieces of nuts: My favorites are crushed walnuts, pecans, almonds and hazelnuts.

How to make flourless banana muffins with 3 ingredients

Prepare the 3-ingredient batter. In a large bowl, mash 3 ripe bananas. When they are completely mashed, add nut butter and stir the mixture until smooth. Stir in the cocoa powder and give it a good mix, until you get a smooth batter.

Bake flourless muffins. Fill ⅔ of each cupcake liner with the batter and bake in hot oven for 20 to 25 minutes at 350°F (180°C). Make sure you do not overbake the banana muffins; they are ready when a toothpick inserted into the center comes out clean.

How to store eggless banana muffins

After baking, let the flourless muffins cool at room temperature. Once cooled, they are safe to be stored. Be sure you place them in an airtight food container to preserve freshness and texture. At room temperature they will stay fresh for up to 3 days, in the fridge they will last for 5 days at most.

For a longer storage, freeze these 3 ingredient muffins in an airtight food container or in a freezer zipping bag for up to 3 months. And all you should do before serving is reheating them in hot oven for a couple of minutes.

Tips for best flourless muffins (with no eggs!)

  • Choose large ripe bananas. You should prefer those bananas with black spots all over their skin; those are the ones that will make your muffins sweeter and moister. In case they are still yellow or green, let them ripe before giving this recipe a try.
  • Choose creamy nut butter. Smooth nut butter is recommended over crunchy because it mixes much better and gives the batter a good texture. My favorites are peanut butter, almond butter and cashew butter.
  • Sweeten to taste. The bananas already give plenty of sweetness to eggless chocolate muffins. But you should consider adding some maple syrup or honey in case you have the sweet tooth.
  • Experiment with mix-ins. Add nuts, chocolate chips or protein powder and you will get the most delicious 3-ingredient muffins with banana.
  • Check baking time. When baking these banana cupcakes, be sure you remove them from the oven as soon as they are done. It should take around 20 to 25 minutes. This will preserve their moist texture and chocolaty flavor.
  • Enjoy on day two. Banana desserts taste better after they have been in the fridge overnight. All the good flavors come out and their texture becomes addictive.

FAQ – Frequently asked questions

Should I add any sweetener?

The ripe bananas will give your sugar-free muffins plenty of flavor without the need for additional sweeteners. This being said, if you have the sweet tooth I recommend fixing the taste with a couple tablespoons of maple syrup or honey. But keep in mind that this may slightly change the batter consistency; add more cocoa powder in case it is too liquid.

How can I replace bananas?

Unfortunately bananas are a key ingredients to make eggless muffins with no flour. Replacing them is not recommended, but it is still possible. A substitute would be unsweetened applesauce.

How can I replace nut butter?

If you are allergic to nuts or do not want to use nut butter, consider replacing it with sunflower seed butter or tahini. This will make the recipe yet more allergy friendly: gluten-free, oil-free, sugar-free, dairy-free and nut-free vegan chocolate muffins!

Can I add protein powder?

Yes, you can either choose to replace half the amount of cocoa powder with protein powder or add protein powder as an additional ingredient, besides the 50 grams (1/2 cup) of cocoa. But let me inform you that the batter may require additional nut butter, in case it gets too thick.
