How to make low carb pizza casserole

First, you will need to prepare the cauliflower.

Remove the leaves and cut cauliflower into florets, then wash under running water. Then cook cauliflower florets in salted boiling water until al dente, for around 5 to 10 minutes (do not overcook it). Finally, drain and rinse cauliflower.

Line now the cauliflower over a medium size casserole dish slightly greased with oil.

Toss the florets with 1 1/2 tbsp olive oil, salt and any additional seasoning you desire (smoked paprika and Italian seasoning).

Spread tomato sauce over the cauliflower, then shred low fat mozzarella and line over the casserole.

Sprinkle low fat cheddar cheese and drizzle a drop of olive oil over the cauliflower casserole. Finally, bake it in hot oven at 200 Cº (400 Fº) for 12 to 20 minutes and enjoy!

Recipe tips

  1. Do not overcook cauliflower. Cook it until al dente because it will bake further in the oven.
  2. After your keto pizza casserole has baked, grill it for a couple of minutes in the oven.
  3. Add a source of protein for a complete and more filling meal.
  4. Flavor your low carb cauliflower dish with extra spices and seasonings. I like using smoked paprika and Italian seasoning.
  5. Don’t forget a drizzle of olive oil on the top! It will make your cauliflower pizza casserole irresistibly crispy.
  6. Serve warm for the best taste.
