Making this recipe vegan is as simple as replacing mozzarella and low fat cheddar with dairy-free cheese alternatives. That’s it. All other ingredients are already vegan.

How to make low carb pizza casserole
First, you will need to prepare the cauliflower.
Remove the leaves and cut cauliflower into florets, then wash under running water. Then cook cauliflower florets in salted boiling water until al dente, for around 5 to 10 minutes (do not overcook it). Finally, drain and rinse cauliflower.
Line now the cauliflower over a medium size casserole dish slightly greased with oil.
Toss the florets with 1 1/2 tbsp olive oil, salt and any additional seasoning you desire (smoked paprika and Italian seasoning).
Spread tomato sauce over the cauliflower, then shred low fat mozzarella and line over the casserole.
Sprinkle low fat cheddar cheese and drizzle a drop of olive oil over the cauliflower casserole. Finally, bake it in hot oven at 200 Cº (400 Fº) for 12 to 20 minutes and enjoy!
