Why is this strawberry bread healthy?
From brownies to cheesecake, I like revisiting traditional recipes and make them more nutritious. Just like this healthy strawberry bread with bananas. A delicious dessert that will satisfy your sweet cravings without guilt. Why? Well, because this recipe is:
- Free from refined ingredients – no white flour or sugars!
- High in fibers and nutrients – it’s made with oats!
- High in protein – it’s a strawberry bread with yogurt!
- Gluten-free – if you use GF oat flour
- Low in fats – it has no oil and no butter
- Low in calories – perfect for your diet!
- Macro-friendly – if you replace part of the flour with protein powder
- Vegan friendly – if you replace the eggs and yogurt as I’ll teach you
The ingredients
This recipe for strawberry bread is very similar to banana bread. Actually, this is a revisitation of the classic banana loaf, with strawberries and a couple of additional ingredients. Curious to learn more? Here is all you need.
- Bananas: the riper the bananas, the better. Look for brown-ish bananas, with dark spots all over their skin. If your bananas are still yellow, let ripe before making this recipe.
- Eggs: use two large fresh eggs, or replace with flaxseed eggs for a vegan recipe.
- Greek yogurt: this low calorie strawberry bread recipe uses Greek yogurt as a replacement for other fats, such as oil or butter. As an alternative you can use any other firm yogurt, also dairy-free. My favorite are Skyr, coconut yogurt or soy yogurt.
- Oat flour: both store-bought and homemade oat flour works, gluten-free if it is necessary. As an alternative, replace with whole-wheat flour, spelt flour or all-purposes flour.
- Almond flour: the almond flour will improve taste and texture of this healthy strawberry loaf. If you don’t want to use it, swap it out for more (oat) flour.
- Maple syrup: used as a natural sweetener, maple syrup can be replaced with honey, date syrup, agave syrup or coconut syrup. For this recipe I do not recommend granular sweeteners.
- Additional ingredients: vanilla extract and a pinch of salt will bring your banana strawberry bread to the next level!
- Baking powder: this will make your loaf rise.
- Strawberries: for the best result use fresh strawberries – the most delicious are those who are red, juicy and with a smaller size! This being said, also frozen strawberries work, but you’ll need to thaw them ahead and remove the excess water.
Strawberry bread with protein powder
For a high protein strawberry bread, replace 50 grams (1/2 cup) of the oat flour with protein powder. Although any type works, my advice is to use vegan protein powders or casein. Unlike whey, these are perfect for baking because they do not dry out. Follow my tips and you’ll kill two birds with one stone: a high protein banana strawberry bread that is as moist as the original.
As a side note, substituting oat flour with protein powder will change the consistency of the batter. In general, vegan protein powders and casein absorb more liquid while whey less. Make sure you adjust the batter with more milk or more flour until it gets smooth, if it is necessary.
And if you are still looking for a high protein banana bread, try this recipe!
High protein banana bread
Healthy and so delicious, this moist protein banana bread has no sugar and no oil. Unlike other recipes, my protein banana bread comes out super soft and moist without drying. 15 grams of protein per slice!
How to make banana strawberry bread
Combine the wet ingredients. Start by mashing the two ripe bananas in a large bowl until they are completely smooth. When you’re done, stir in all the remaining wet ingredients: the eggs, the Greek yogurt, the vanilla extract and a pinch of salt. Mix well, until you get a smooth batter.
Incorporate the dry ingredients. Sift the oat flour, the almond flour and the baking powder into the wet mixture, then stir the batter while gradually pouring in the milk. Once it is smooth, fold the diced strawberries into the batter.
Bake the easy strawberry bread. Pour the healthy strawberry bread batter into a prepared loaf pan, and if you wish, top with more fruit. Bake in hot oven for 30 to 40 minutes, or until a toothpick inserted into the center of your loaf comes out clean. Take the strawberry banana loaf out of the oven and let cool for about 15 minutes.
Storage information
Before storing, let the strawberry banana bread cool completely at room temperature. Once cooled, wrap very well and it will stay fresh for up to 3 days, if kept at room temperature.
For a longer storage, place the dessert in a food container and refrigerate for a maximum of 5 days. As an alternative, you can also freeze in an airtight zipping bag for up to 3 months. Before serving, remove from the freezer and pop in the oven for a couple of minutes. Enjoy!
Tips for the making strawberry bread with yogurt
- Do not over-bake the loaf or it gets dry. You know it’s ready when a toothpick inserted into its center comes out clean.
- Make this banana bread with fresh strawberries.
- Opt for spotty bananas that are well ripe.
- Mix in some extra ingredients: blueberries, raspberries and chocolate chips are my favorite.
- Try this recipe with white chocolate chunks inside!
FAQ – Frequently asked questions
Replace the eggs with two flaxseed eggs and the dairy products (Greek yogurt and milk) with plant based alternatives.
For a gluten-free strawberry bread, use certified gluten-free oat flour.
Substitute 50 grams (1/2 cup) of oat flour with your favorite protein powder and adjust with more milk or flour if necessary.
This recipe does not require any yeast. It uses baking powder, instead.
I recommend fresh strawberries, but also frozen are okay (read the following question for more details).
Yes, this healthy breakfast bread can also be prepared with frozen strawberries. But before mixing it in, be sure you thaw the fruit and remove any excess water that generates while defrosting. Moreover, you may need to make up for the extra moisture by adding 1 to 2 tbsp of flour more.
First, wash, dry and chop the strawberries into dices. Finally, mix them into the batter.
