  • Eggs: two large, fresh eggs is what you should be looking for (best if they are free-cage eggs).
  • Olive oil: use extra virgin olive oil for the best taste and nutrients.

Start by warming the olive oil in a medium skillet over medium-high heat. When it is hot, add the chopped onion, salt, pepper and sauté until golden brown. Add the fresh spinach, chopped sun-dried tomatoes and cook over medium heat until the spinach is ready.

Push aside the spinach to form two holes in the center, then break an egg into each. Sprinkle with Parmesan cheese on top and cover the skillet. Cook until the egg is done to your preferences, it should take around 2-4 minutes. Season with salt and pepper to taste, and serve right away with a sprinkle of chili flake.

How to make single serve egg skillet in the air fryer 

Did you know you can make eggs in the air fryer?

Well, in case you didn’t, I am pleased to announce that this healthy egg skillet recipe can also be made in the air fryer. But you will have to make a couple of twists.

To make air fryer egg skillet, first sauté the onion with salt and pepper. Then add spinach, sun-dried tomatoes and cook until spinach is ready.

When they are ready, transfer the vegetables to an oven-safe skillet. Add the eggs, sprinkle with Parmesan cheese and cook in hot air frier for 2 to 4 minutes at 190°C (375°F).

This healthy egg skillet is packed with protein and nutrients. If you then side it with a source of complex carbs, you’ll get a complete meal that has all three macronutrients. Protein from the eggs, healthy fats from the eggs and olive oil, and complex carbs from… whatever you like!
