This protein egg scramble is one of my favorite dinners for busy weekdays. When I come home after a long day at university, all I want is something quick an easy. But still tasty and nutritious.

That’s why I love this recipe so much. Packed with 32 grams of protein, this spinach egg scramble comes together in under 10 minutes. And it tastes so delicious that you will never guess it is actually healthy.

Turning a simple scramble into a high protein egg scramble is actually very simple. All you need to do is combining one whole egg with plenty of egg whites. With over 10 g of protein per 100 g, egg whites are a fantastic source of lean protein. They are also a low calorie food with virtually zero carbs and fats.

No wonder that I love egg whites so much. Besides for this protein spinach scramble, I like using them to make protein crepes, oatmeal, wraps and even pizza!

This healthy spinach scramble is a very simple recipe. You only need a handful of ingredients and less than 10 minutes of your day.

For my recipes I like using liquid egg whites in brick. They are so convenient and come in very handy for many uses. What is more, nothing goes wasted because. But if you can’t easily find them, this protein scramble recipe also works with egg whites from fresh eggs.

How to make high protein egg scramble

Start by heating a large nonstick skillet over medium-high heat.

When it is hot, add olive oil and the sliced onion. Sauté the onion over medium until it is golden brown.

In the meanwhile, in a medium bowl, whisk together egg, egg whites, Parmesan cheese, salt and pepper to taste. Pour the protein egg mixture into the skillet and add the fresh spinach.

Cook the eggs over low-medium heat, pushing them back and forth with a rubber spatula, until set to your liking.

Serve this high protein egg scramble warm, sprinkled with chili flakes on top, if you desire.

Here are a couple of tips for making the most delicious protein egg scramble with spinach.

  • Sauté the onion before pouring in the egg mixture. This will give your scramble a superb flavor!
  • Cook the egg scramble over low to medium heat. We don’t want burnt eggs!
  • While the scramble are cooking, make sure you push it back and forth with a rubber spatula. This will make fluffy and flavorsome spinach egg scramble!
  • For a fluffier scramble, don’t move your eggs with a spatula. Use a rubber whisk instead!

  • 1/2 tbsp olive oil
  • 1/3 medium onion, sliced
  • 50 grams (1 1/2 cup) fresh spinach
  • 15 grams (1 tbsp) Parmesan cheese
  • salt and pepper (to taste)
