Start by heating a large nonstick skillet over medium-high heat.
When it is hot, add olive oil and the sliced onion. Sauté the onion over medium until it is golden brown.
In the meanwhile, in a medium bowl, whisk together egg, egg whites, Parmesan cheese, salt and pepper to taste. Pour the protein egg mixture into the skillet and add the fresh spinach.
Cook the eggs over low-medium heat, pushing them back and forth with a rubber spatula, until set to your liking.
Serve this high protein egg scramble warm, sprinkled with chili flakes on top, if you desire.
