When Autumn comes, so do my cravings for cinnamon and pumpkin spice. After making apple cinnamon protein pancakes and baked oats, it was time for cinnamon rolls. But here we make things healthy, so I came up with this is oatmeal cinnamon roll recipe!

If you are looking for new ways to eat oats for breakfast, this recipe is all you need. Made with oat flour and Greek yogurt, this oatmeal cinnamon roll tastes like dessert for breakfast. But healthy!

This recipe is egg-free, sugar-free and free from refined ingredients. What is more, it is suitable for a gluten-free and vegan diet. And as this cinnamon roll is made with oats, it is also packed with fibers and nutrients.

Ingredients

This oat flour cinnamon roll is very simple to make. It comes together with just a handful of basic ingredients that you can find at any grocery store.

Here is all you need to make oatmeal cinnamon roll.

  • Oat flour: store-bought or homemade, oat flour is the main ingredient of this recipe. But keep this in mind, oat flour is NOT instant oats, this recipe does not work with instant oats.
  • Greek yogurt: thick Greek yogurt is what you should be looking for, either nonfat or full fat. For a dairy-free recipe replace with a thick vegan yogurt.
  • Granulated sweetener: for a sugar-free cinnamon roll, this recipe uses erythritol. You can replace with your preferred granulated sweetener, coconut sugar or brown sugar. Do NOT use maple syrup, honey or any liquid sweetener.
  • Coconut oil: replace melted coconut oil with avocado oil, canola oil, sunflower seed oil or any neutral oil. Also melted butter works.
  • Baking powder: this makes the cinnamon roll rise.
  • Salt: this adds taste and flavor.

For the filling, this oatmeal cinnamon roll recipe uses granulated sweetener (erythritol) and ground cinnamon. As for the dough, you can replace erythritol with any sweetener you prefer as long as it is granulated.

Well, if you are wondering, let me tell you how I make healthy cinnamon roll icing with yogurt.

Vanilla yogurt, cashew butter and sweetener, that’s it. The recipe for the icing is pretty simple. You only need to mix yogurt with cashew or almond butter and some sweetener to taste. For my icing I used:

  • 2 tablespoons of vanilla yogurt
  • 1 teaspoon of cashew butter
  • 3/4 teaspoon of granulated sweetener

I did not use Greek yogurt to make the icing, so that the mixture came out pretty smooth. But if you are making this icing with a thick yogurt, you may need to adjust with little milk to consistency, until smooth and creamy.

Vegan oatmeal cinnamon roll

There is no need for eggs to make this oat flour cinnamon roll, so that you can easily prepare it vegan. Making vegan oatmeal cinnamon roll is as simple as replacing Greek yogurt with plant based alternatives. But keep in mind that this recipe requires a thick and firm yogurt (just like Greek yogurt), otherwise it won’t work. My recommendations are soy Skyr, vegan Greek yogurt or firm coconut yogurt.

Oat cinnamon roll with protein powder

For a high protein cinnamon roll, you can integrate this recipe with some protein powder. But before you go and start replacing oat flour with protein, make sure you read though this section. 

To make protein oatmeal cinnamon roll you will need to replace 10 grams (1 tablespoon) of oat flour with 10 grams (1 tablespoon) of protein powder. Based on the protein powder type, your dough may require some more yogurt (if you are using vegan protein powder) or a bit more oat flour (if you are using whey). Do not replace more than 1 tablespoon of oat flour with protein powder otherwise your recipe won’t come out.

How to make cinnamon roll with oat flour

First of all, prepare the cinnamon roll filling. In a small bowl whisk together granulated sweetener and ground cinnamon. Set aside for later while you make the cinnamon roll.

For the oatmeal cinnamon roll, in a medium bowl stir together oat flour, granulated sweetener, baking powder and pinch salt. Add the Greek yogurt, melted coconut oil and mix to get a dough.

Using your hands, knead the oatmeal dough until soft. You may need to adjust with more oat flour if the dough is too sticky or with more Greek yogurt if it is too dry (this depends on the yogurt texture).

Roll the dough into a rectangle, brush the surface with melted coconut oil (or your preferred oil) and sprinkle the top with the cinnamon “sugar” filling. Finally, cut the rectangle into 2 stripes, you can either form 2 separate rolls or combine them to make a single oatmeal cinnamon roll.

Roll oatmeal cinnamon roll, pressing tight so that it doesn’t fall apart. After rolling, place it in a slightly greased ramekin or oven-safe bowl.

Bake the oatmeal cinnamon roll in hot oven at 180ºC (350ºF) for 10 to 12 minutes.

How to store oat flour cinnamon roll 

After baking, seal and store the cinnamon roll in a food container. At room temperature, it will last for up to 2 days. For a longer storage, seal and refrigerate for up to 5 days. Reheat it for a couple of minutes in hot oven before serving.

Can I make vegan oat cinnamon roll?

Definitely! Making this recipe vegan is very simple. All you need to do is replacing Greek yogurt with a thick plant based yogurt of your choice. Good options are soy Greek yogurt, soy Skyr or thick coconut yogurt.

Can I skip the oil?

No, unfortunately you cannot skip the oil otherwise the dough will get too crumbly and fall apart. You can however replace melted coconut oil with any oil you prefer, such as avocado or canola oil, as long as it has a neutral taste.

Is this oat flour cinnamon roll gluten-free?

Use certified gluten-free oat flour to make a gluten-free cinnamon roll. Although originally gluten-free, most oats in the market contain a small amount of gluten. So make sure you double-check the package to be sure.

Can I make oat flour cinnamon roll for more people?

This is a single serve oatmeal cinnamon roll recipe. But this doesn’t mean you can’t make it for more people! If you want to get more cinnamon rolls, increase all ingredient quantities based on the number of servings you want to get. The procedure remains the same.

Is oat flour the same as instant oats?

No, oat flour is not the same as instant oats. This single serve cinnamon roll recipe requires oat flour and will not work with instant oats. Instant oats would make your dough wet and sticky.

How can I make oat flour at home?

Making oat flour at home is very quick and simple. All you need to do is adding rolled oats to a high speed blender and process until the oats have become flour. Depending on the power of your blender, this process may require a couple of minutes. The result should be a finely grounded powder, just like flour!

Troubleshooting

  • The dough is sticky! As each Greek yogurt has a slightly different texture, your dough may require some more flour. So add more flour if your dough is too sticky.
  • The dough is too crumbly! As mentioned before, different yogurts have different textures. Adjust with a bit more Greek yogurt if your dough is still too crumbly after kneading.
  • My cinnamon roll is falling apart! As oat flour does not contain gluten, it is less elastic than normal flour. To prevent it from falling apart, make sure you tightly press the dough when forming the cinnamon roll.
