Oatmeal Cinnamon Roll Recipe

This oatmeal cinnamon roll recipe makes a cozy healthy breakfast or dessert. With Greek yogurt and oat flour, this cinnamon roll recipe is a new tasty way to eat oats for breakfast. Egg-free and vegan friendly recipe!

Ingredients

  • 50 grams (1/2 cup) oat flour (see notes*)
  • 1 tbsp granulated sweetener (erythritol, or coconut sugar)
  • 1/2 tsp baking powder
  • a pinch of salt
  • 30 grams (2 tbsp) thick Greek yogurt
  • 10 grams (2 tsp) melted coconut oil (sub with avocado oil or canola oil)

Filling

  • melted coconut oil (to brush)
  • 1 tsp granulated sweetener (erythritol, or coconut sugar)
  • 1/2 tsp ground cinnamon

Instructions

  • Preheat oven to 180ºC (350ºF).
  • Prepare the filling. In a small bowl whisk together granulated sweetener and ground cinnamon. Set aside for later.
  • In a medium bowl stir together oat flour, granulated sweetener, baking powder and pinch salt. Add Greek yogurt, melted coconut oil and mix to get a dough.
  • Using your hands, knead the oatmeal dough for a couple of minutes until it is soft (adjust with more oat flour if the dough is too sticky or with more Greek yogurt if it is too dry).
  • Roll the dough into a rectangle, brush with melted coconut oil (or preferred oil) and sprinkle the top with the cinnamon u0022sugaru0022 filling. Finally, cut the rectangle into 2 stripes (you can either form 2 separate cinnamon rolls or combine them to make a single oatmeal cinnamon roll).
  • Roll oatmeal cinnamon roll, pressing tight so that it doesn't fall apart. After rolling, place the cinnamon roll in a slightly greased greased ramekin or oven-safe bowl.
  • Bake in hot oven for 10 to 12 minutes.

Notes

  • Oat flour is not instant oats. This recipe does not work with instant oats.
