You’ve probably heard of chocolate bark or candy bark, but what about viral banana bark? Together with frozen banana snickers and blueberry yogurt clusters, they are the ultimate TikTok trend for your summer. A trend worth a try! At home we all love this frozen banana dessert, and I bet you will love it too.

Why you will love banana bark

  • Healthy summer snack. Made with frozen bananas, peanut butter and dark chocolate, this is a good-for-you recipe. It’s vegan, gluten-free, sugar-free (if using sugar-free chocolate), and can easily be made high protein or low calorie.
  • Easy 4 ingredient recipe. You only need 4 simple ingredients to make TikTok viral banana bark at home. No bake and no cooking, you just need to assemble your bark and freeze.
  • Sweet and tasty treat. Have a bite and it will taste like frozen Snickers. Sweet and peanut buttery, it’s a no-brainer for when you crave dessert but want to eat healthy. From kids to adults, it’s a real crown pleaser.
  • Customizable recipe. Top with flaky sea salt or chopped peanuts, add Greek yogurt, or mix pb2 with protein powder. There are so many ways how you can make banana bark from TikTok.

Ingredients and substitutes

  • Banana. You’ll need two medium size bananas, cut into slices. The best bananas for barks are yellow, ripe up to the point. They are sweet and tasty, but not as soft as brown bananas.
  • Peanut butter. I recommend creamy natural peanut butter, unsalted, sugar-free and oil-free. But also crunchy or salted peanut butter works. You can replace peanut butter with almond butter, cashew butter, or PB2 (aka powdered peanut butter).
  • Chocolate chips. This healthy banana bark recipe uses and recommends dark chocolate chips, with no added sugar. But of course, you can melt any chocolate you want, such as semi-sweet chocolate, white chocolate, or vegan chocolate chips.
  • Coconut oil. Microwaving chocolate with half a teaspoon of coconut oil facilitates the melting process. Although it is the best option, coconut oil can be replaced with butter.
  • Toppings. Take your chocolate peanut butter banana bark to the next level with the addition of toppings. Chopped peanuts and flaky sea salt are my favorite.

How to make banana bark

  1. Slice bananas. Peel and slice the bananas into approximately 1/2-inch (1.25 cm) thick rounds. You should get about 10-12 slices per banana, depending on their size. Arrange the slices in rows on a parchment paper covered baking sheet or in a plate, without leaving too much space between the rows. You should get about 4 lines (2 per banana).
  2. Add peanut butter. Spread an even layer of creamy peanut butter all over the banana slices. If you have a hard time spreading peanut butter without that the bananas move, I recommend melting your pb until it gets smooth and creamy.
  3. Melt dark chocolate. Place dark chocolate chips in a microwave-safe bowl with 1/2 teaspoon of coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate has melted. As an alternative, you can also melt chocolate in a double boiler.
  4. Add dark chocolate. Spread melted chocolate over the peanut butter banana layer, then sprinkle the top with chopped peanuts and flaky salt if desired.
  5. Freeze and store. Place the baking sheet in the freezer and freeze until the bark banana has set. The chocolate should have hardened. Store leftovers in an airtight container in the freezer.

Storage directions

Once it is frozen and the chocolate is firm, remove your banana bark from the baking sheet and place into an airtight container, then freeze. If you keep it in the freezer, chocolate banana bark will last for up to two months. When you’re ready to enjoy, take it out from the freezer and serve immediately. Don’t worry, the bananas won’t turn black in the freezer because they freeze pretty quickly.

Variations and topping ideas

  • Banana yogurt bark. Spread a smooth layer of Greek yogurt over the peanut butter, right before you top with melted chocolate. A tasty alternative to blueberry yogurt clusters.
  • Banana bark with powdered peanut butter. For low fat and low calorie banana bark, replace regular peanut butter with PB2 or PB fit. The ratio powdered peanut butter to water is 2 tbsp PB and 1 tbsp water. So, in total you’ll need about 1/2 cup powdered peanut butter mixed with 1/4 cup water.
  • High protein banana bark. There are two ways to make high protein banana bark, choose one or both. You can either add an extra layer of Greek yogurt, or you can mix powdered peanut butter with protein powder. Just combine PB2 with protein powder, add water and stir until creamy.
  • Strawberry bark. Not a fan of bananas or you have banana allergy? Swap them out for your favorite fruit such as sliced strawberries or blueberries.
  • Banana bark with toppings. After spreading the melted chocolate, finish your bark off with toppings. Some tasty ideas are flaky sea salt, chopped peanuts, pistachios, almonds, walnuts, pecans, goji berries and dried cranberries.

Success tips

  • Melt peanut butter, if it is too thick. When melted, the peanut butter gets smooth and creamy, which will make it easier for you to spread it over bananas.
  • Make your own frozen banana snack by customizing this recipe to your likings. You can add toppings, Greek yogurt, or you can even swap out the nut butter with powdered peanut butter.
  • Prepare banana bark in batches and keep it in the freezer for healthy snacking. So that next time you crave something sweet, you grab a frozen banana bark rather than a candy bar.
  • Eat cold, as soon as you take it out from the freezer. The frozen banana tends to soften when it is exposed to hot temperatures, especially on a hot summer day, and your healthy bark may thaw.
Chocolate Peanut Butter Banana Bark
Why is it called banana bark?

If you are familiar with chocolate bark, you probably know that it consists of melted chocolate poured over a baking sheet and broken into pieces once firm. In the case of banana bark, the chocolate is spread over peanut butter layered bananas. Freeze and break into pieces just like a candy bark.

What about taste and texture?

The sweetness of banana perfectly pairs with the creamy, nutty flavor of peanut butter, while rich chocolate adds a delicious contrast. When frozen, the sweet banana becomes firm, the peanut butter hardens slightly, and the chocolate forms a crisp shell. Creamy and crunchy at the same time, banana bark tastes like Snickers ice cream bars. But with a healthy, fruity twist.

What equipment do I need?

You only need a knife, a baking sheet or pan with parchment paper, and a freezer.
