What’s in eggless mug cake?

This easy chocolate mug cake recipe requires no more than a handful of basic ingredients. From banana to maple syrup, you probably already have everything at home. Make sure you read further to learn everything about ingredients and substitutes.

  • Banana. Half ripe banana serves as natural sweetener, helps provide moisture and texture to your mug cake. You can replace with 3 tablespoons of applesauce, pear sauce or pumpkin purée.
  • Oat flour. For a eggless chocolate mug cake that is also high in fibers and nutrients, I used oat flour. But you are free to choose any other flour, such as whole wheat flour, spelt flour or all purpose flour. Also almond flour can be used.
  • Cocoa powder. Cocoa powder adds a rich chocolate flavor to the mug cake. For less sugar, I recommend unsweetened cocoa powder. But also dutch cocoa or sweetened cocoa powder are suitable.
  • Maple syrup. Together with banana, pure maple syrup sweetens this eggless mug cake in a natural way. The best alternatives are honey, agave syrup and date syrup.
  • Milk of choice: Milk is added to provide moisture and create a batter-like consistency. You can use any type of milk, such as oat milk, unsweetened almond milk, soy milk, cow’s milk, or any other dairy-free milk.
  • Baking powder: Baking powder acts as leavening agent, helping the dessert rise and become fluffy. 
  • Vanilla extract and salt. Last but not least, vanilla extract gives this vegan mug dessert a delicious taste while salt balances its sweetness level.

The simplicity of my vegan chocolate mug cake recipe gives plenty of room for customization. Add extra ingredients to the batter or toppings and create your own mug dessert. Eggless, of course.

Mix all ingredients together. In a microwave-safe mug, mash the banana and combine with oat flour, cocoa powder, maple syrup, baking powder and salt. Mix well. Add the milk and stir until the batter is smooth and free of lumps. Top your eggless mug cake with chocolate chips if desired.

Microwave and enjoy. Place the mug in the microwave and cook on high for approximately 1-2 minutes, or until the cake has risen and is set in the center. Microwaves may vary, so adjust the cooking time accordingly. Carefully remove the mug from the microwave (it will be hot!) and allow the cake to cool for a minute or two before serving.

How to make eggless mug cake in the oven?

Here’s how to make this vegan chocolate dessert in the oven, in case you do not have a microwave or prefer not to use it. I promise, it is very simple. After preparing the batter, transfer it to an oven-safe ramekin and bake in hot oven at 180°C (350°F) for 12 to 15 minutes. Be sure to not overcook it, or it may get tough and dry.

Storage information

After it has cooked in the microwave, eggless mug cake should cool completely before storing. Once it has cooled, transfer to an airtight container or wrap it well in plastic wrap. Store it in the refrigerator for up to 3 days. As an alternative, you can freeze it for up to 3 months. When ready to eat, thaw in the refrigerator or at room temperature and microwave for some seconds until warm and fluffy.
