- ½ banana ripe
- 50 grams (½ cup) oat flour or preferred flour
- 10 grams (1 tbsp) cocoa powder
- ½ to 1 tbsp maple syrup or honey, more to taste
- ⅓ tsp baking powder
- 60 ml (¼ cup) milk of choice
- a pinch of salt
- 1 tsp chocolate chips optional
In a microwave-safe mug, mash the banana and combine with oat flour, cocoa powder, maple syrup, baking powder and salt. Mix well.
Add the milk and stir until the batter is smooth and free of lumps. Top your eggless mug cake with chocolate chips if desired.
Place the mug in the microwave and cook on high for approximately 1-2 minutes, or until the cake has risen and is set in the center. Microwaves may vary, so adjust the cooking time accordingly.
Carefully remove the mug from the microwave (it will be hot!) and allow the cake to cool for a minute or two before serving.
