Ingredients and substitues
Four simple ingredients is all you need to make no bake low carb cookies at home. You’ll be able to easily find everything at the grocery store. And don’t worry if something is missing, down here I have included a list of all substitutes.
- Almond flour. A key ingredient for making no bake keto cookies, almond flour is a low carb alternative that can safely be consumed raw. You can purchase it from the store or make your own at home by grinding nuts into a fine powder.
- Cocoa powder. The best option to make keto chocolate cookies is unsweetened cocoa powder. Low in carbs and sugar-free.
- Keto granular sweetener. I normally use powdered erythritol or monk fruit sweetener. Both replace sugar very well without aftertastes. Other great options are allulose and xylitol, but I do not recommend stevia. It has a strong aftertaste.
- Nut butter. You’ll need a smooth and creamy nut butter, salted or unsalted but without added sugar. Almond butter will perfectly match the flavor of no bake almond flour cookies, but also peanut butter or cashew butter are great.
Substitutes
- Almond flour. Replace with a nut flour or seed flour of your choice, such as hazelnut flour, peanut flour or sunflower seed flour. As an alternative you can also add some protein powder, read further for more details.
- Cocoa powder. Swap it out for more almond flour, or use a scoop of protein powder to make no carb no bake cookies that are also high in protein.
- Keto granular sweetener. This super easy keto no bake cookies recipe can be prepared with any granular sweetener you like, I used monk fruit sweetener. Coconut sugar or brown sugar will also work, but they are not low carb. Do not replace with syrups such as keto maple syrup or honey.
- Nut butter. If you have a nut allergy, replace nut butter with sunflower seed butter or tahini.
Keto no bake cookies with protein powder
Looking for a macro-friendly dessert? Boost the nutritional values of your low carb no bake cookies with the addition of protein powder. Here you have two options, either replacing part of the almond flour or swapping out cocoa powder for protein powder.
- Protein powder instead of almond flour: Replace 30 grams (1/3 cup) of the flour with a protein powder of your choice, flavored or unflavored. My recommendation is vanilla whey protein powder.
- Protein powder instead of cocoa powder: Substitute all the cocoa powder with protein powder (as before, I suggest whey). Use your favorite flavor, I like vanilla or chocolate.
When making a protein no bake cookie keto, one thing to keep in mind is that protein powder is not the same as flour. As a result this recipe may need some small adaptations. Depending on protein powder used, you may need to adjust the dough with more almond flour if the mix is too wet or fix with additional nut butter in case it gets thick and dry.
How to make keto no bake cookies
STEP 1 – Combine all ingredients. In a large mixing bowl, combine all the dry ingredients: almond flour, cocoa powder and keto granulated sweetener. Give it a quick stir to combine the powders, then stir in the nut butter.
STEP 2: Make keto cookie dough. Stir well until you get a soft dough, first with a fork and then using your hands. If after mixing the dough is still too dry, add some more nut butter, or adjust with more almond flour if it is too sticky. This depends on the creaminess of the nut butter you use.
STEP 3: Make no bake keto cookies. Shape some keto dough balls, then place over a parchment paper covered tray and flatten into cookies. If you desire, top with keto chocolate chips.
STEP 4: Refrigerate or serve. Before you serve, I recommend refrigerating these no bake keto cookies for about 1 hour. This simple step improves taste and texture.
Storage information
To store no bake keto cookies, place them in an airtight container in layers and refrigerate. When you pack your treats in the container, make sure you divide each layer with parchment paper so that the cookies won’t stick. In the fridge, they will last for up to a week. For a longer storage, transfer in zipper bags and freeze for up to three months.
Tips for the best no bake keto cookies
- Use almond flour in combination with natural almond butter, smooth and creamy. In terms of nut butter, this is the best option because it gives cookies a delicious and delicate taste without covering all flavors. I personally feel that peanut butter tastes too strong.
- Get to know your own dough, and become great friends. Especially when it comes to nut butter, there can be significant differences between one product and the other. Some are creamier, some are thicker. This may change the consistency of the dough, making it thicker or thinner than expected. Don’t be afraid of adjust with more almond flour or nut butter if it is necessary.
- Customize no bake almond flour cookies to match your taste preferences. Whether you don’t like cocoa powder or whether you want some extra chocolate chips, this recipe is a great canva for endless variations. Experiment with walnuts, pecans or chocolate chips…The sky’s the limit!
- When they are done, resist any temptation and refrigerate your sweet keto treats before eating. About an hour of chilling time is enough to give keto no bake cookies without coconut a better texture and richer taste.
