Ingredients

Salad Dressing

  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp honey
  • salt and pepper to taste

Feta Cheese Watermelon Salad

  • 4 cups watermelon diced
  • 1 cup English cucumber diced
  • red onion thinly sliced
  • cup mint leaves lightly packed
  • ½ cup feta cheese crumbled

Instructions

Make the Dressing

  • In a small bowl or mason jar, whisk olive oil with lime juice, honey, salt and pepper. Set aside while preparing the watermelon salad.

Assemble the Salad

  • In a large bowl, combine diced watermelon with diced cucumber, sliced red onion, mint leaves, and crumbled feta cheese. Pour the dressing over the salad and toss to combine. Serve fresh for the best taste.
