Protein Lava Cake

- 40 grams (1/2 scant cup) oat flour (sub with preferred flour)
- 20 grams (3 tbsp) protein powder (best if vegan or casein)
- 1 tbsp preferred sweetener
- 1 tbsp cocoa powder
- 1/2 tsp baking powder
- pinch of salt
- 45 grams (3 tbsp) Greek yogurt (or 1/2 mashed banana)
- 80 ml (1/3 cup) preferred milk
- chocolate chips (optional)
Lava Filling
- 1 tbsp chocolate protein spread (or chocolate protein pudding, chocolate)
Preheat oven to 180 C° (350 F°).
In a bowl, combine oat flour, protein powder, sweetener of choice, cocoa powder, baking powder, pinch of salt and Greek yogurt. Stir, while adding the milk, until you get a smooth batter.
Transfer the protein batter to a prepared ramekin (11 cm / 4 in diameter and about 250 ml / 8.5 oz capacity) and add the chocolate protein spread in the middle. If desired, top with chocolate chips.
Bake the protein lava cake in hot oven for 20 - 25 minutes. Serve warm and enjoy!
