Pizza Crust

  • 250 grams (9 oz.) canned chickpeas (drained and rinsed)
  • 1 egg
  • 50 grams (1/2 cup) oat flour (or preferred flour)
  • salt (to taste)

Pizza Topping

  • 3 tbsp pizza sauce (see notes for details*)
  • 3 tbsp shredded mozzarella cheese
  • a drizzle of olive oil
  • Preheat oven to 200°C (400°F).
  • Drain and rinse canned chickpeas, then add to a blender together with egg, oat flour and salt. Process until you get a smooth dough.
  • Transfer chickpea pizza dough over a sheet of baking paper, then with the help of your hands shape into a thin pizza.
  • Spread pizza sauce over the crust and sprinkle on shredded mozzarella cheese.
  • Drizzle with olive oil and bake in hot oven for 15 to 20 minutes, or until cheese has melted and the pizza crust is golden baked.
