Substitutes for zucchini brownies

- Egg – replace with flaxseed egg if you’re vegan or if you do not want to use the egg.
- Greek yogurt – replace with half mashed banana or 3 tablespoons applesauce or 3 tablespoons pumpkin purée.
- Almond flour – replace with oat flour, coconut flour or with your favorite flour. Also spelt flour or all purpose flour work for this recipe but it will not be keto anymore.
- Protein powder – replace with more almond flour, oat flour or your favorite flour.
- Cocoa powder – use Dutch cocoa powder or you can also replace part of the cocoa powder with more chocolateprotein powder.

Which protein powder should I use ?
You can prepare these healthy zucchini brownies with your favorite chocolate or unflavored protein powder, both Whey and vegan protein work. But note that based on the protein powder used, you will need to adapt with more milk (or more flour if your brownie batter is too dry).
To make my Keto small batch brownies I used chocolate flavored Whey protein. I personally recommend making these zucchini brownies with Whey because they are lighter than vegan protein. But this doesn’t mean that vegan protein powder do not work… just use the one you like the most and adapt with milk to consistency.
How to make zucchini brownies
Making this low carb small batch brownie recipe is as simple as mixing all ingredients together in a bowl. Here is how to make zucchini brownies at home in under 30 minutes!
- Prepare zucchini – grate and squeeze zucchini with a clean towel to remove the water. This step is important so that your brownies will not get too watery and wet.
- Mix wet ingredients – in a mixing bowl stir together egg, Greek yogurt, shredded zucchini and sweetener of choice.
- Add dry ingredients – add the remaining ingredients and stir to get your keto brownie zucchini batter.
- Bake – add brownie batter to a parchment paper covered baking pan and bake in hot oven for 25 to 35 minutes, or until baked through.
Zucchini brownies – troubleshooting
- My zucchini brownies are too wet ! – if your keto brownies turn out too wet it may come down to the zucchini. Make sure you shred and squeeze zucchini to remove excess water.
- I don’t have protein powder ! – you can replace protein powder with more almond flour or oats flour, if you prefer.
- My keto brownie batter is too liquid ! – if you notice that your brownie batter is too liquid before baking, make sure you mix in some more almond flour or protein powder. The quantity of milk really depends on the protein powder you use.
- My keto brownie batter is too wet ! – opposite to the problem mentioned above, add more milk of choice if your batter is too dry.
- After 30 minutes, my small batch brownies still haven’t baked ! – this zucchini brownie recipe may take as long as 35 minutes to be completely baked. You can safely keep your small batch brownies in the oven for longer but keep an eye on them. I recommend performing the “toothpick test” : stick toothpick in the center of brownies: if it comes out wet the brownies needs more time.

Single Serve Keto Zucchini Brownies (High Protein)
Ingredients
- 1 egg (sub with flaxseed egg)
- 50 grams (3 tbsp) Greek yogurt
- 1 medium zucchini, shredded and squeezed (ca.80 grams)
- 1 to 1 1/2 tbsp sweetener of choice (to taste)
- 20 grams (3 tbsp) almond flour (sub with oat flour)
- 20 grams (3 tbsp) protein powder (see notes*) (sub with almond or oat flour)
- 20 grams (2 1/2 tbsp) cocoa powder
- 1/2 tsp baking powder
- pinch salt
- 60 ml (1/4 cup) milk of choice (see notes*)
Instructions
- Preheat oven to 180 Cº (350 Fº).
- Grate zucchini and squeeze water using a clean towel (also paper towels work).
- In a bowl stir together 1 egg, Greek yogurt, shredded zucchini (squeezed from the water) and sweetener of choice.
- Add to wet keto mixture almond flour, protein powder, cocoa powder, baking powder and pinch salt.
- Pour in milk of choice and mix ket brownie batter. If necessary add more milk (see notes*).
- Cover with parchment paper a 16 x 10 cm (6.2 x 4 in) baking pan and transfer zucchini brownie batter in baking pan.
- Bake in hot oven for 20 to 30 minutes (it may take as long as 35 minutes). To check if keto zucchini brownies are baked through stick toothpick in the center of brownies: if it comes out wet the brownies needs more time.
- Let small batch brownies cool before slicing.
