These ham and cheese roll ups remind me of a dish from my childhood: “Crespelle”. Up until I was 14, when I came home from school I used to eat at my grandparents’ house. From Monday to Saturday, each day had a different menu. Friday used to be my favorite, because my grandma would make her addictively delicious Crespelle!

If you don’t know it yet, I’m Italian but I lived in Germany and I am currently based in Spain. That’s why one of the most frequent questions I get is whether I miss all the good food from my home country. But contrary to what many people think, I’m not a huge fan of Italian food. Ehm…apart from pizza and Crespelle!

Crespelle are a sort of savory crepes filled with all the goodness: spinach, ricotta or ham and cheese (my favorite, by the way). People, including my grandma, often top Crespelle with béchamel sauce and more cheese before baking.

Craving a comforting – and nostalgic – dish, last night I decided to prepare something similar to Crespelle. But my own way, of course. After a couple of swaps here and there, I came up with these healthy ham and cheese roll ups. The perfect recipe for a comforting lunch, dinner or even breakfast that is also healthy and high in protein. Honestly, you should try!

The ingredients

This ham and cheese roll ups recipe is very simple. Making the savory crepe will only require you a handful of ingredients. For the filling, instead, you just need ham and cheese. That’s it!

Ingredients for healthy roll up crepes

Egg: this ingredients is a must for soft savory crepes that taste good. For roll ups that are higher in protein and lower in calories, you can replace a whole egg with 2 (about 60 ml) egg whites. However, the taste won’t be exactly the same.

Oat flour: to make healthy egg roll ups that are also gluten-free, this recipe uses oat flour. As an alternative you can replace with spelt flour, wholewheat flour or all purposes flour.

Milk of choice: these ham and cheese roll ups can be prepared with any milk you like. My recommendations are cow milk, soy milk or oat milk. But don’t worry, both dairy milk and unsweetened plant based options will work.

Olive oil: use extra virgin olive oil for the best taste and nutrition. As a substitute, you are free to utilize any other type of oil or melted butter. My recommendations are avocado oil, walnut oil or pumpkin seed oil.

Salt and pepper: for the tastiest egg roll ups, add as much salt and pepper as you like. Although you may also use other seasonings, my recommendation is to remain on the conservative side and stick to salt and pepper. If you still long for more, then I suggest powdered garlic and onion.

Ingredients for the roll up filling

Ham: although this recipe works with any type of ham, my recommendations are “Prosciutto-style” hams. And for healthier omelet roll ups, make sure you choose ham-style turkey or chicken, or lean ham.

Cheese: this healthy egg roll up recipe can be prepared with any cheese you prefer. I recommend (grated) mozzarella cheese, but also gouda or any other melting cheese will work. For dairy-free ham roll ups, replace cheese with plant based alternatives.

How to make healthy egg roll ups

First, you will need to make the egg roll up crepes. In a bowl, start by whisking together the egg with the milk, olive oil, salt and pepper (to taste). Once combined, sift in the oat flour and stir well until all ingredients are combined and the batter is smooth.

After preparing the batter, heat a medium non stick skillet or crepe pan with little oil or butter over medium heat. Scoop out some of the batter over the pan and move the skillet in a circular form to spread the batter evenly. Cook over medium heat for 1 to 2 minutes and flip, then transfer to a plate.

Once they are ready, fill each crepe with one slice of ham and some cheese. Wrap to make an ham and cheese egg roll up and serve. For a tastier meal, I recommend passing your healthy egg roll ups over hot pan for about 30 seconds to 1 minute. This will allow the cheese to melt!

How to store ham and cheese ham roll ups

After making, fill the crepes with ham and cheese before rolling them up. Once they have cooled, transfer to an airtight food container and refrigerate. In the fridge, these healthy ham and cheese roll ups with eggs will last for about three days. Before eating, reheat the roll ups over a hot pan or in hot oven until warm.

Ham and Cheese Filling
