Protein Rice Krispie treats with rice cakes…what?! 

Well, that’s correct. These chocolate Rice Krispies are made with rice cakes. The same food that many people consider as boring, but that in reality is incredible: healthy, tasty and so versatile!  

But yes…I have to admit that sometimes rice cakes can get disappointing. Especially when they get soggy. Nothing worse than soggy rice cakes…At least until now, because you’re about to learn how to turn soggy rice cakes into chocolate protein Rice Krispie treats! 

Chocolate Protein Rice Krispie Treats (with Rice Cakes)

The ingredients

Making protein Rice Krispie treats at home is extremely quick and easy. You only need 3 ingredients and 5 minutes of your day. Curious to learn more? Here is everything this rice protein recipe calls for. 

  • Rice cakes: use your favorite rice cakes, salted or unsalted. As an alternative, you can replace rice cakes with puffed spelt cakes, puffed buckwheat cakes, puffed cereal cakes or directly use puffed rice. 
  • Protein powder: this recipe uses whey protein powder. I highly recommend whey because it mixes very well and you won’t get lumps. If you use vegan protein powder or casein, instead, your protein Rice Krispies may require some more melted chocolate.
  • Dark chocolate: use your favorite chocolate, sugar-free or extra dark for a healthier recipe. You can also opt for chocolate chips, they are going to melt anyway!

Which protein powder for protein Rice Krispie treats?

Although this recipe works with any type of protein powder, I highly recommend the use of whey. The reason is that whey mixes very well and therefore you won’t get lumps. If you make protein Rice Krispie treats with a vegan powder or casein, instead, your recipe may require some more melted chocolate. Or your rice cake protein bars will turn out quite “thick”! 

In terms of flavor, this recipe works great with chocolate, vanilla or unflavored protein powder. As it is my absolute favorite, I made my healthy Rice Krispie treats with vanilla protein powder.

How to make protein Rice Krispie treats at home

First thing first, you will need to crush in a large bowl the rice cakes into very small pieces. Then, scoop in the protein powder and mix very well

When the protein rice cake mixture is ready, it is time to melt the chocolate. For this, cut the chocolate into small chunks, then place into a microwavable bowl and microwave for 30 second intervals, removing and stirring at each 30 second interval, until the chocolate has melted completely. Make sure that you stir often so that the chocolate does not burn. As an alternative, you can also melt it using the bain marie method.

Mix into the protein rice cake mixture the melted chocolate until all ingredients are combined.

Finally, transfer the protein Rice Krispies mix to your prepared baking dish. Press gently with your fingertips just until completely spread out, then refrigerate for at least one hour before cutting into slices.

How to store rice cake Krispies

Before serving, these chocolate protein Rice Krispie squares need to be refrigerated – this way the chocolate will harden. If you seal them properly, in the fridge, these rice protein bars will last for up to 5 days.

Ingredients

  • 50 grams (1.8 oz) rice cakes (or puffed rice)
  • 25 grams (1/3 cup) protein powder (whey, see notes*)
  • 170 grams (6 oz) dark chocolate

Instructions 

  • Line a 6-inch square baking dish with parchment paper. Set aside.
  • In a large bowl, crush the rice cakes into very small pieces, then stir with protein powder (see notes*) very well.
  • Cut the chocolate into small chunks, then place in a microwavable bowl and microwave for 30 second intervals, removing and stirring at each 30 second interval, until the chocolate has melted. Make sure that you stir often so that the chocolate does not burn. As an alternative, you can melt the chocolate using the bain marie method.
  • Mix into the protein rice cake mixture the melted chocolate until all ingredients are combined and covered with chocolate.
  • Transfer to the prepared baking dish. Press gently with your fingertips just until completely spread out, then refrigerate for at least one hour before cutting into slices.

Notes

  • This recipe uses whey protein powder. If you prepare these chocolate Rice Krispie treats with vegan protein powder or casein, the recipe may require more melted chocolate (or less protein powder).

    A question to this recipe – I wanted to try adding some PB for more of a Ferrero Rocher vibe. Do you think it would work? How much would you recommend to add or how to change the proportions?

      Regarding your enquiry, I would personally add around 2 to 3 tbsp of peanut butter and adjust with more rice cakes if the mixture is still too wet. It sounds like a great idea, I should definitely try as well!
