- Flour. All-purpose flour gives it a soft, fluffy texture. If using self-rising flour, omit baking powder. For a healthier option, you can replace part of the flour with whole wheat, though the bread may be denser.
- Greek yogurt. Full-fat Greek yogurt (I used 5%) gives the best flavor and texture, creating a rich, soft dough. Nonfat or lactose-free options work too, but they may produce a slightly drier dough, so adjust consistency if needed.
- Baking powder. This is essential for leavening unless self-rising flour is used, which already contains it. For a fluffier rise, make sure your baking powder is fresh.
- Salt. Kosher salt adds flavor and supports the dough’s structure, sea salt works just as well.
How to make air fryer bread
Step 1 – Mix the ingredients. In a large mixing bowl, combine flour with baking powder, and salt. Add Greek yogurt and mix until the dough starts to come together. The dough should be soft but manageable. If it feels sticky, sprinkle in a little more flour; if it’s too dry, add a spoonful of Greek yogurt and mix again.
Step 2 – Work the dough. Transfer the dough to a clean, floured surface and knead quickly until it’s smooth. Divide into 4 equal pieces, then roll each piece into a smooth ball to shape buns.
Step 3 – Air fry. Place the buns into the air fryer basket, leaving enough space between them to allow for proper air circulation. If necessary, work in batches of 2 each. Air fry bread at 300°F (150°C) for 15–20 minutes.
How to know if the bread is cooked?
To check if your air fryer buns are cooked, look for a golden-brown top and give them a light tap – if they sound hollow, they’re ready. To be completely sure, insert a toothpick into the center; it should come out clean with no sticky dough.
When baking bread in an air fryer, don’t forget to check underneath. The underside should be dry and firm, not overly wet or doughy. If it feels undercooked, simply flip the bun and air fry for an additional 2-3 minutes.
Recipe variations
- Garlic. Add minced garlic or garlic powder to the dough, then brush the top with a little olive oil or melted butter and sprinkle with dried herbs for delicious air fryer garlic bread.
- Cheese. Mix grated cheese (cheddar, mozzarella, or Parmesan) into the dough for a cheesy, rich flavor. Optionally, you can also include some pieces of diced ham or bacon.
- Olives & walnuts For a Mediterranean twist, add chopped olives (black or green) and chopped walnuts to the dough. A tablespoon of olive oil is also recommended, it creates a focaccia experience.
- Toppings. After shaping into buns, sprinkle the tops with pumpkin seeds, sunflower seeds, flaxseeds or poppy seeds. You can also fold some seeds into the dough.
- Cinnamon. Add ground cinnamon and about half a tablespoon of maple syrup or honey into the dough. For more flavor and texture, consider mixing in a handful of (soaked) raisins.
How to store and freeze
To store. First, allow the bread to cool completely to room temperature. Once cooled, transfer to an airtight container to keep it fresh and avoid humidity. At room temperature, it will stay soft and flavorful for up to 2 days. For longer storage refrigerate for up to 4 days. Before serving, warm it up in the microwave for about 15 seconds or quickly toast bread in an air fry.
To freeze. Place the buns in a freezer-safe zipper bag, removing as much air as possible. They can be frozen for up to 3 months, and you can thaw them at room temperature or reheat directly in the air fryer for a few minutes.
