Low Carb Healthy Syrniki (Cottage Cheese Pancakes)

- 1 egg
- 150 grams (1/2 cup) cottage cheese (or ricotta cheese)
- 60 grams (1/2 heaping cup) flour (oat flour, gluten-free if required)
- 1 to 1/2 tbsp sweetener of choice (erythritol)
- 1/2 tsp baking powder
In a bowl add cottage cheese (or ricotta), egg, sweetener of choice and stir to combine.
Add (oat) flour and baking powder and stir to combine. Start with 30 grams (3 tbsp) flour and add more to consistency, if the dough is too wet (it depends on the cheese you use).
Form some dough discs and cook in hot pan (greased with little oil) over medium heat on both sides.
Serve with jam, maple syrup, honey, some yogurt or fruit.
