Preheat oven to 320°F (160°F) and line a baking sheet with parchment paper.
Heat butter and honey together, either in the microwave or on the stove.
In a large mixing bowl, add peanuts, 1 tablespoon of sugar and part of the salt. Keep the remaining sugar and salt for later. Once it is hot, pour the honey butter mixture onto peanuts and give it a good stir.
Transfer the honey glazed peanuts over the baking sheet, spreading them in a single layer so that they do not overlap.
Bake in hot oven for 20 to 25 minutes, stirring frequently. Give a first stir after 5 minutes, then stir every couple of minutes.
After baking, place honey roasted peanuts in a bowl, then mix with the remaining coconut sugar and salt. Let cool for at least 5 minutes.
