Honey Roasted Peanuts

Make your favorite peanut snack at home with this easy Honey Roasted Peanuts recipe. Sweet and salty, these homemade roasted nuts are healthier than the ones you buy. But be careful, they're addictive!

Ingredients

  • 2 cups (450 g) peanuts preferably raw and unsalted, see notes*
  • 3 tbsp honey
  • 2 tbsp butter
  • 2 tbsp coconut sugar replace with brown sugar or regular sugar
  • ¾ to 2 tsp salt to taste

Instructions

  • Preheat oven to 320°F (160°F) and line a baking sheet with parchment paper.
  • Heat butter and honey together, either in the microwave or on the stove.
  • In a large mixing bowl, add peanuts, 1 tablespoon of sugar and part of the salt. Keep the remaining sugar and salt for later. Once it is hot, pour the honey butter mixture onto peanuts and give it a good stir.
  • Transfer the honey glazed peanuts over the baking sheet, spreading them in a single layer so that they do not overlap.
  • Bake in hot oven for 20 to 25 minutes, stirring frequently. Give a first stir after 5 minutes, then stir every couple of minutes.
  • After baking, place honey roasted peanuts in a bowl, then mix with the remaining coconut sugar and salt. Let cool for at least 5 minutes.

Notes

This recipe uses raw unsalted peanuts. You can replace with roasted salted peanuts, but in this case you should reduce the amount of salt or skip it completely. Adjust the taste to your own preferences.

Storage directions

  1. After roasting, let the nuts cool completely at room temperature.
  2. Once they have cooled, place in an airtight container or in a sealable mason jar and close tightly.
  3. Store homemade roasted peanuts in a cool, dry place such as in the cupboard. They will last for a couple of weeks to a month.

Recipe variations

  • Spicy honey roasted peanuts: Mix in cayenne pepper or chili powder to taste.
  • Spiced peanuts with honey: Mix in ground cinnamon and vanilla extract.
