1/2tspground cinnamon
Instructions
Preheat oven to 180ºC (350ºF).
Prepare the filling. In a small bowl whisk together granulated sweetener and ground cinnamon. Set aside for later.
In a bowl, stir together self-rising flour (or all purposes flour plus 1/2 tsp baking powder), Greek yogurt and maple syrup. Using your hands, knead the dough for a couple of minutes until it is soft (adjust with more flour if the dough is too sticky or with more Greek yogurt if it is too dry).
Roll the dough into a rectangle, brush with melted coconut oil (or preferred oil) and sprinkle the top with the cinnamon “sugar” filling. Finally, cut the rectangle into 2 stripes (you can either form 2 separate buns or combine them to make a single serve cinnamon roll).
Roll the healthy single serve cinnamon roll, pressing tight so that it doesn’t fall apart. After rolling, place the cinnamon bun in a slightly greased greased ramekin or oven-safe bowl.
Bake in hot oven for 10 to 15 minutes. When baked, let the cinnamon roll cool at room temperature for at least 5 minutes before serving.
Notes
Replace self raising flour with all-purposes flour plus 1/2 teaspoon of baking powder.
