Healthy Peanut Butter Oatmeal Chocolate Chip Cookies

These healthy peanut butter oatmeal chocolate chip cookies are addictively chewy! Quick and easy to make, this peanut butter oat cookie recipe is also gluten-free, oil-free, dairy-free and flourless.

Ingredients

  • 1 egg
  • 80 grams (1/3 cup) peanut butter
  • 85 grams (1/2 cup) coconut sugar
  • 1 tsp vanilla extract
  • 1/6 tsp sea salt
  • 150 grams (1 1/2 cup) rolled oats
  • 1 tsp baking powder
  • 40 grams (1/4 cup) chocolate chips
  • 1/2 to 1 tbsp preferred milk

Instructions

  • Preheat oven to 190 Cº (400 Fº).
  • In a large mixing bowl add 1 egg, peanut butter, granular sweetener (erythritolvanilla extract and salt. Using a fork or whisk, stir the wet mixture for a couple of minutes until all is well combined.
  • Add to the wet mixture rolled oats and baking powder. Using a spatula stir, all ingredients together. Depending on the peanut butter consistency, if it is too thick the dough may require about 1 tablespoon (15 ml) of milk. Stir in the chocolate chunks.
  • Let the healthy peanut butter oatmeal cookies batter rest for at least 10 minutes in the fridge.
  • Scoop some dough out and shape 10 cookies. Transfer the peanut butter cookies to a parchment paper covered baking sheet, spacing the cookies apart.
  • Bake these flourless oatmeal cookies in hot oven for 10 to 14 minutes – mine took 13 minutes – and let cool over a baking rack before serving.

Notes

Depending on the peanut butter consistency, if the dough is is too thick it may require about 1 tablespoon (15 ml) of milk.
