Greek Yogurt Pasta Sauce

This Greek Yogurt Pasta is the perfect healthy alternative to heavy cream. Greek yogurt pasta is creamy, flavorful, budget-friendly and so easy to make in just 15 minutes. It tastes like Alfredo, but high protein and low calorie.

Ingredients

  • 10.5 oz (300 g) uncooked pasta
  • 1 ½ garlic clove minced
  • 1 tbsp butter or olive oil
  • 2 cups (440 g) Greek yogurt plain and full fat
  • 3 tbsp pasta water from cooking the pasta
  • cup (30 g) Parmesan cheese or shredded cheddar cheese
  • salt and pepper to taste
  • lemon zest freshly grated

Instructions

  • Cook the pasta in salted boiling water according to the package instructions until al dente. Once cooked, drain the pasta, reserving 3 tablespoons of the cooking water. Transfer the noodles to a large mixing bowl and drizzle with olive oil.
  • To temper the yogurt, combine the Greek yogurt with the reserved pasta water, salt, and pepper in a separate bowl. Stir with a fork or whisk until smooth, tasting and adjusting the seasonings as needed.
  • In a large skillet, heat the butter and sauté the garlic until fragrant. Add the cooked pasta, stirring to coat, and cook for a few minutes before turning off the heat.
  • With the heat off, add Greek yogurt sauce, Parmesan cheese and lemon zest to the pasta, stirring until well combined.
  • Serve this creamy Greek yogurt pasta with an additional sprinkle of Parmesan cheese, chopped parsley, and your favorite toppings.

Notes

Optional Protein

This simple Greek yogurt pasta sauce recipe can be served with an additional protein. Some ideas are chicken breast, diced ham, tuna fish, salmon, shrimps and tofu. Add your favorite protein to the cooked pasta, alongside the yogurt sauce.
