- 1 cup (230 g) cottage cheese 4% fat recommended
- ½ cup (50 g) shredded pepper jack cheese or preferred shredded cheese
- ½ tbsp taco seasoning see notes for homemade recipe
Add to a food processor or a high speed blender cottage cheese. Blend on high for 30 seconds to 1 minute, until it reaches a smooth and creamy texture. If necessary, scrape down sides with the help of a spatula.
Transfer blended cottage cheese to a microwave-safe bowl, then mix with shredded cheese and taco seasoning until combined. As an alternative, blend all ingredients together.
Place the cottage cheese mixture in the microwave and microwave in 15-20 seconds intervals until warm and melty–it should take 1 to 1 ½ minutes in total. Do not overheat, or it will separate.
Serve warm with your favorite toppings and tortilla chips or veggies.
Homemade Taco Seasoning
Mix 1/4 tsp chili powder, 1/4 tsp ground cumin, 1/8 tsp garlic powder, and 1/8 tsp smoked paprika, adjusting with cayenne or red pepper flakes for more spiciness.
Alternative Cooking Methods
- Oven – Bake cottage cheese queso at 340°F (170°C) for 8-12 minutes, until warm and melty. Do not overheat, or the dip may start separating.
- Air fryer – Air fry cottage cheese queso at 300°F (150°C) for 7-10 minutes, until warm and melty. Do not overheat, or the dip may start separating.
- Stovetop – Place the dip in a nonstick saucepan and cook on low heat for 3-5 minutes. Do not overcook, or the dip may start separating.
Storage Directions
Store in an airtight container in the fridge for up to 2 days. When ready to eat, reheat in the microwave for 15-20 seconds, stirring in between to bring back its creamy consistency.
