Servings: 6 clusters
- 1 cup (160 g) blueberries fresh
- 1 cup (230 g) Greek yogurt nonfat or full fat
- ¾ cup (125 g) melted chocolate
- 1 to 2 tbsp maple syrup or honey optional, to taste
In a large bowl, stir Greek yogurt with maple syrup or honey if it is necessary (see notes*). Gently fold in the fresh blueberries.
Spoon out some of the mixture and form clusters. Place the blueberry clusters onto a parchment-lined baking sheet, spacing them apart. Freeze for about 1-2 hours or until the yogurt is firm.
Melt dark chocolate in the microwave in 30-second intervals, stirring until smooth. If it is necessary, melt chocolate with 1 teaspoon of coconut oil.
Once the yogurt is firm, remove the clusters from the freezer. Dip each one into the melted dark chocolate, then place them back onto the parchment-lined baking sheet.
Freeze for at least 30 minutes until the chocolate sets. Store in an airtight container in the freezer.
- Sweeten Greek yogurt with maple syrup or honey, if you want sweeter blueberry yogurt clusters.
