Ingredients

  • 1 egg
  • 2 bananas ripe
  • 50 grams (1/2 cup) protein powder
  • 25 grams (1/4 cup) cocoa powder
  • 25 grams (1/4 cup) coconut flour
  • pinch of salt
  • up to 80 ml (1/3 cup) milk of choice

  • maple syrup or honey

Instructions

  • Preheat oven to 180°C (350°F) and fold a 15 cm x 15 cm (7 inch x 7 inch) brownie pan with parchment paper.
  • In a large bowl, mash the bananas and combine with the egg until you get a smooth mixture.

  • Add protein powder, cocoa powder, coconut flour and a pinch of salt, then mix well until you get a smooth brownie batter. Depending on the type of protein powder used, you may need to add as much as 80 ml (1/3 cup) of milk : start with 1 to 2 tbsp and add as much milk as required to get a smooth batter.

  • Transfer the banana protein brownie batter to the prepared brownie pan, then bake in hot oven for 20 to 25 minutes Let cool completely at room temperature before slicing.

Notes

  • This banana protein brownie recipe can be prepared with any type of protein powder - for mine I used chocolate flavored soy protein. However, depending on your choice this recipe will require different quantities of milk: less for whey and more for casein or vegan protein powder.
  • As this recipe uses chocolate flavored protein powder in combination with bananas, there is no need for additional sweeteners. If using unflavored protein powder, instead, you may need to add a couple tablespoons of maple syrup or honey to your liking.
