Flourless Protein Brownies

Extra fudgy, rich and chocolatey, these are the best flourless protein brownies ever. Honestly, these protein brownies taste so good that you'll never guess they are also healthy and low carb.

Ingredients

  • 70 grams (¾ cup) almond flour or oat flour
  • 50 grams (½ cup) protein powder
  • 30 grams (⅓ cup) cocoa powder
  • 90 grams (½ cup) granular sweetener or coconut sugar
  • 1 tsp vanilla extract
  • tsp salt
  • 80 grams (3 oz.) dark chocolate
  • 15 grams (1 tbsp) coconut oil or butter
  • 2 eggs

Instructions

  • Preheat oven to 180°C (350°F) and fold a 15 cm x 15 cm (7 inch x 7 inch) brownie pan with parchment paper.
  • In a large mixing bowl combine all dry ingredients - almond flour, protein powder, cocoa powder, granular sweetener (or coconut sugar), vanilla extract and salt.
  • Cut dark chocolate into chunks and melt it in a separate bowl with coconut oil (or butter) in the microwave for about 1 minute to 1 minute 30 seconds (or melt in a bain-marie using a pot).
  • Add melted chocolate mixture to dry ingredients together with two eggs. Using a fork or spatula, stir to combine into a brownie batter (see notes*).
  • Transfer the protein brownies batter into the prepared baking pan. Top with chocolate chips and coarse salt if you desire.
  • Bake in hot oven for around 18 to 20 minutes.

Notes

Depending on the protein powder that you are using, your brownie batter might require either more almond flour (in the case of whey) or a drop of milk (in the case of vegan protein powder or casein).
