Protein Cookies with Greek Yogurt

Learn how to make protein cookies with Greek yogurt, no need for protein powder. Ready in 15 minutes, believe me when I say that this is best protein cookie recipe ever. Low carb, low calorie, high protein and irresistibly delicious!

Ingredients

  • 220 grams (1 cup) thick Greek yogurt low-fat or full fat
  • 1 egg
  • 80 grams (⅓ cup 1 tbsp) granular sweetener erythritol
  • 90 to 100 grams (ca. 1 cup) almond flour defatted or full-fat, replace with oat flour

Optional Ingredients

  • ½ tsp vanilla extract
  • pinch salt
  • chocolate chips

Instructions

  • Preheat the oven to 190ºC (375°F).
  • In a large mixing bowl, combine Greek yogurt with egg, granular sweetener (erythritol), vanilla extract and pinch of salt. Stir until creamy.
  • Gradually sift in almond flour and mix until you get a smooth dough (based on the Greek yogurt texture you may need to add more flour if the dough is too sticky). Optionally, you can now fold in the chocolate chips. 
  • Scoop out some dough and shape 9 cookies. Transfer the protein cookies to a parchment paper covered baking sheet, spacing cookies apart.
  • Bake the protein cookies in hot oven for 10 to 15 minutes. Let the Greek yogurt cookies cool before serving.
