Ingredients

  • 1 ½ cups (150 g) rolled oats gluten-free if necessary
  • ½ cup (50 g) protein powder
  • ⅓ cup (100 g) maple syrup or honey
  • ¼ cup (60 g) peanut butter
  • 2 tbsp coconut oil or melted butter
  • ½ tsp ground cinnamon optional
  • ⅓ tsp sea salt

Optional Ingredients

  • 1 egg white
  • 1 tsp vanilla extract
  • nuts and seeds
  • chocolate chips

Instructions

  1. Preheat the oven to 170°C (325°F) and line a baking sheet with parchment paper.
  2. Add coconut oil to a microwave safe bowl, then microwave until it has melted. Once melted, stir peanut butter, maple syrup and salt into the coconut oil.
  3. In a large mixing bowl, combine oats with protein powder and cinnamon. Give it a quick stir, then add the peanut butter syrup mixture.
  4. Evenly spread the protein oat mixture on the lined baking sheet.
  5. Bake in hot oven for about 20-30 minutes, stirring halfway through to prevent burning and ensure even toasting. Once it is golden brown, remove from the oven and let cool for at least 1 hour before serving.
  6. Once it has cooled, mix in any other ingredient such as walnuts, raisins, or chocolate chips.
