Last Sunday I was in the mood for banana bread. I wanted it so badly that when I came home from running I set out baking. And since I also craved chocolate (mhh, what a surprise), I decided to make my healthy chocolate banana bread.

But a glance to my pantry reveled something unpleasant. Terribly unpleasant. I just had one banana, definitely not enough to make a whole loaf. Neither the chocolate nor my protein banana bread recipe.

“What recipes can I do with one banana?” I asked myself. But as my cravings were intense, the answer came out pretty quickly. “Healthy one-banana banana bread with chocolate! That is all I want.” And it is the way how this healthy banana bread recipe with one banana was born.

Ingredients for one-banana banana bread

Besides one banana, you will only need a couple of simple, basic ingredients. Here is all you need to bake a healthy chocolate banana bread for one. Don’t worry if something is missing, because you’ll find a list of substitutes for each ingredient (apart the banana, of course).

  • Banana: the riper the banana, the better. Look for a brown-ish banana, with dark spots all over its skin. If your banana is still yellow, let it ripe before making this recipe.
  • Egg: for a tastier and healthier mini banana loaf, make this recipe with a free-range fresh egg.
  • Nut butter: this recipe can be prepared with cashew butter, almond butter, walnut butter or even peanut butter. If you are allergic to nuts, make this chocolate one-banana banana bread with tahini or sunflower seed butter.
  • Greek yogurt: as this recipe uses no oil, the Greek yogurt will make your mini chocolate banana bread soft and moist. If you don’t want to use it, this ingredient can be replaced with any yogurt of your choice. Also dairy-free!

How to make healthy banana bread with one banana

Start by mashing in a mixing bowl the banana. Once smooth, stir the nut butter, egg and Greek yogurt into the banana mixture.

Add to the mashed banana the granular sweetener, vanilla extract and a pinch of salt. Stir the wet mixture with a whisk or fork for around two minutes, or until all is well combined.

Stir in oat flour (or your preferred flour), almond flour, cocoa powder and baking powder. Give it a good stir until all is well combined, then fold though the chocolate chips.

Pour the banana bread batter into your prepared loaf pan, and sprinkle some more chocolate chips on top, if you desire. Bake the healthy one-banana banana bread in hot oven for 25 to 30 minutes, or until a toothpick inserted into the center of your chocolate banana loaf comes out clean.

Finally, remove from the oven and let cool in the loaf pan for about 15 minutes.

Once the healthy one-banana banana bread has cooled completely, you can wrap it very well and it will stay fresh for up to 3 days at room temperature. If you plan to store the mini chocolate banana bread for longer, place the dessert in a food container and refrigerate for a maximum of 5 days.

Ingredients

  • 1 ripe banana
  • 1 egg
  • 30 grams (2 tbsp) Greek yogurt (or preferred yogurt)
  • 1 tbsp nut butter (cashew butter or almond butter) or tahini
  • 30 grams (3 tbsp) granular sweetener (erythritol, coconut sugar or brown sugar)
  • 50 grams (1/2 cup) oat flour (or preferred flour)
  • 20 grams (3 tbsp) almond flour (or more oat flour)
  • 20 grams (3 tbsp) cocoa powder
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • a pinch of salt
  • 2 tbsp chocolate chips

Instructions 

  • Heat oven to 180 C° (350 F°) and fold a 12 cm (5 inches) loaf pan with parchment paper or grease with oil.
  • In a mixing bowl mash the ripe banana with a fork until completely smooth. Stir nut butter, egg and yogurt into the banana mixture.
  • Add in granular sweetener, vanilla extract and a pinch of salt. Stir the wet mixture with a whisk or fork for around two minutes, or until all is well combined.
  • Sift in oat flour (or preferred flour), almond flour, cocoa powder and baking powder. Give it a good stir until all is well combined, then fold though chocolate chips.
  • Pour the batter into your prepared loaf pan, and if desired top with chocolate chips. Bake in hot oven for 25 to 30 minutes, or until a toothpick inserted into the center of your chocolate banana bread comes out clean.
  • Remove chocolate banana bread from oven and let cool in the loaf pan for about 15 minutes. Then remove bread from the pan and let cool completely before slicing.
